Chicken Mushroom Filling
You will need chicken thighs, diced onion, button mushrooms (chopped), baby spinach, thickened fresh cream, and poultry seasoning.
Remove fat from chicken thighs and cut meat into small pieces. Saute chicken for 3-4 minutes until juices run dry. Remove from pan. Saute mushrooms, onions, and spinach. Add chicken pieces. Pour cream on top and cook on slow heat for 4-5 minutes stirring consistently. Season.
Filling is ready for your crepes.
