Ingredients:

  • 1 16 oz. package of dried pasta (we used spirals)
  • 4 tbsp of butter
  • ¼ cup of all-purpose flour
  • 2 cups of milk
  • 1 cup of cream
  • 1 tsp of dry mustard
  • Dash of worcestershire sauce
  • ½ tsp of salt
  • ¼ tsp of white pepper
  • 1 cup of mild cheddar cheese, extra for garnish, if desired
  • ½ cup of sharp white cheddar or swiss cheese (we used Gruyere)
  • 1 tbsp of dried parsley, for garnish
  • basic crepes

Cook the pasta according to the directions until done. Drain and set aside. Do not rinse.

Melt the butter in a large skillet over medium high heat. When melted, whisk in the flour and cook for 1-2 minutes. Add milk and cream slowly and whisk until smooth. Add mustard, worcestershire, salt and pepper. Add cheese to sauce and stir until melted.

Add the pasta and stir, cooking for an additional minute until pasta is heated through and incorporated into the sauce.

Assemble crepes: Lay first crepe across serving platter. Ladle ½ cup of macaroni and cheese across half the crepe. Fold in half and dust with extra cheese and dried parsley. Repeat with remaining crepes and serve immediately.

Yield: 8 servings
