Wild Berry Crepe Batter

Wild Berry Crepes

Who said healthy food recipes for kids have to be bland and boring?

Our pink crepe batter recipe for wild berry crepes with yogurt filling is a lot of fun to make and eat. Even your picky eat will love it and devour the fruits he or she otherwise won't eat.

It's another one of our easy recipes that kids can make!

These "purple" crepes are not only fun to make, they're healthy.

Studded with puréed blueberries and raspberries, this crepe batter recipe is also healthy.

It makes a great breakfast that you can let your child fill with his or her own favorite crepe fillings.

Hint: As you make them, your entire kitchen will be filled with the heavenly aroma of fresh blueberry muffins! It's a sneaky way to get the family up and out of bed.

Ingredients for Crepe Batter:

  • 1½ cups all-purpose flour
  • 4 tablespoons melted butter
  • 1¾ cups skim milk
  • 3 eggs
  • 1 tablespoon granulated sugar
  • ¼ cup off fresh or frozen mixed berries (We used a combination of small Maine blueberries and raspberries)
  • pinch of salt

How To Make Crepe Batter:

Combine all ingredients except for frozen fruit into a blender and mix until well-blended. Add the fruit at the end and purée until smooth.

Important: Refrigerate the batter for at least 30 minutes. This gives the batter the opportunity to rest and fully come together.

Yield: 24 6-inch crepes (8" pan) or 18 8-inch crepes (10" pan)

Note: You will only need 8 8-inch crepes for this recipe. You may refrigerate or freeze the remainder of these crepes for a future use.

Ingredients for 8 Wild Berry Crepes with Yogurt Filling:

  • 4 small cartons (6 oz.) of natural yoghurt (you can also use flavored yoghurt, but it usually has lots of sugar)
  • 4 cups of sliced fresh fruit such as strawberries and bananas
