What do you do when you have extra roast beef leftovers?

Celebrate! You've got the basic building blocks for a delicious and easy dinner recipe.

Then, along with a little swiss cheese, roll it up in crepes!


Ingredients:

  • 8 slices of leftover roast beef, thinly sliced
  • 1 cup of gravy
  • 4 slices of swiss cheese
  • basic crepes

First, make crepes according to directions in How to Make Crepes.

Next, preheat oven to 350 degrees. Lay first crepe flat on a foil-lined baking sheet. Lay 2 slices of roast beef across bottom of crepe. Top with one slice of swiss cheese and fold in quarters. Repeat with remaining crepes. Cover with foil and place in oven and bake until beef is heated and cheese is bubbly.

Before serving, top each crepe with 2-3 tablespoons of warm gravy. Serve immediately.

Yield: 4 servings
