Country Sausage Gravy

My friend and crepe muse Brooke reminded me today that I need to post my sausage and gravy crepe recipe.

  • 1 lb. of mild sausage, crumbled
  • 3 cups of milk
  • 1 medium onion, diced
  • 4 tbsp of flour
  • Dash of cayenne pepper
  • ¼ cup of chopped fresh parsley, optional for garnish
  • ½ cup of grated cheddar cheese for garnish, optional
  • 6 basic crepes

Brown sausage and onion in large skillet over medium heat. Stirring, break up large chunks of meat and cook until no longer pink.

Add flour, one tablespoon at a time, stirring until it is completely absorbed. After you have added all the flour, add milk and stir with whisk until thoroughly combined. Reduce heat to low and simmer for 2 minutes. Remove from heat.

Assemble crepes: Lay first crepe flat. Ladle ⅓ cup of sausage and gravy over crepe. Sprinkle with cheese and parsley, if desired, and roll in half. Fold again into a triangle. Repeat with remaining crepes and serve immediately.

Yield: 6 servings (1 crepe each)
