Mix sugar, water and lemon juice together until sugar dissolves. Pour over sliced berries and refrigerate for at least four hours. Stir at least twice to distribute juices. Note: For this step, you may substitute frozen, sweetened strawberries that have been thawed.
Using electric mixer, combine strawberry preserves and cream cheese until combined. Fold in strawberries. For one serving, spread ¼ cup of the strawberry cream cheese mixture across half of one crepe. Fold in half and then in triangles. Repeat procedure for remaining three crepes. Top each crepe with a dollop of whipped cream and fresh berry slices.
Yield: 4 servings (1 crepe each)
