Our best zucchini recipe is different, because the zucchini and carrots are not in the filling, but in the batter. This is the perfect cheat for any family members, who don't like to eat veggies :-)
They won't even notice, there's zucchini and carrots in their meal, because the vegetables are hidden in the crepe batter. If you have an especially picky kid, you can cut the veggies even smaller, so they won't show up in the batter.
We love to use cream cheese, but you could add any of our savory crepe fillings to this recipe.
First, make basic crepe recipe. Refrigerate batter.
Next, add zucchini and carrots to batter and stir. Now, make crepes according to directions in How to Make Crepes. You will need 8 crepes for this recipe.
Beat cream cheese for 1 minute until smooth and creamy. Add herbs and mix until thoroughly incorporated.
Assemble crepes: Lay first crepe flat on serving dish. Spread with 2 tbsp of herbed cream cheese. Fold in half and then into quarters. Repeat with remaining crepes.
Extra Tip: If you're in a really hurry, this crepe will also taste wonderful without any filling at all!
Yield: 8 servings (1 crepe each)
