Blueberry Crepes with Lemon Dessert

Seeking new blueberry dessert recipes? Try blueberry crepes. This no bake recipe features fresh blueberries on top of a layer of warm, sweet lemon curd. This simple dessert can also make a great breakfast for those mornings when you wake up with a sweet tooth.

  • 1⅓ cups fresh blueberries, washed and dried
  • 1 cup prepared lemon curd
  • Powdered sugar
  • Zest of ½ lemon


  • If you made your crepes ahead of time, remove from refrigerator (or freezer), wrap them in foil and warm in a 325-degree oven for 10-15 minutes until heated through. Once crepes are ready, put lemon curd in a microwaveable bowl and microwave for 15 seconds or until warm.

    Lay crepe on a flat working surface. Spread with ¼ cup of lemon curd. Spread ⅓ cup of blueberries over curd. Fold crepe into quarters. Repeat with remaining crepes. Before serving, dust each crepe with powdered sugar and 1 tsp of lemon zest.

    Yield: 4 servings (1 quarter each)
