Bourbon Barbecue Sauce Recipe

North Carolina is home to some of the best barbecue on the planet. While pork is the meat of choice, opinions on the type of sauce literally split our state in halfeast and west. Eastern North Carolinians prefer a vinegar-based sauce and those from the west prefer a sweeter, tomato-based sauce. This sauce is a combination of both of these traditions. Ingredients: - 2 slices of bacon, diced
- 1 small onion, chopped
- ¼ cup of bourbon
- ¼ cup of apple cider vinegar
- ¼ cup of brown sugar
- 1 can of tomato sauce (15 oz. )
- 1 tsp of worcestershire sauce
- ½ cup of peach preserves
- ½ tsp of salt
- ¼ tsp of black pepper
- Dash of cayenne pepper
Sauté bacon until crisp, about 5 minutes. Add onion and cook until transparent and softened, about 2 minutes. Deglaze pan with bourbon and apple cider vinegar. Stir in sugar, worcestershire sauce, preserves, tomato sauce and seasonings. Bring to a simmer and reduce heat. Let simmer for 5 minutes. Serve immediately over your favorite savory
