Crepe Cart Business

Hello,


I'm thinking of starting a crepe cart business in my beautiful city. My idea is for a "walk friendly" crepe, i.e. no plates, cutlery or toppings. Does anybody have advice on making my crepe more sturdy or firm? Some of my fillings tend to seep through, making for a gooey mess! What shape would be better, cone or square? (I'm leaning towards square) Any ideas on packaging or wrappers? Thanks for any other info you can provide.

From Ashley, World of Crepes: Great question. I have heard of cone-style crepe wrappers in Asia, but I don't have any direct experience with these. Suggestions, anyone?
