Crepe Recipe for Easy Salmon Appetizers
Need an easy smoked salmon appetizer recipe? My dad simply loves smoked salmon and he created this recipe as a short cut to traditional crepes using refrigerated crescent rolls, or as we say, "mock crepes." Whatever you call them, they're a delicious and elegant start to any meal.
8-oz. pkg of refrigerated crescent roll dough
4 oz. of smoked salmon
8 oz. block of cream cheese, softened
1 tablespoon of capers
1 red onion, sliced into rings
8 small lemon wedges
fresh parsley for garnish
Preheat oven to 350 degrees. Roll out crescent dough and seal seams together. Using the rim of a glass or biscuit cutter, cut dough into 8 two-inch circles. Lay on a baking sheet and bake for 8-10 minutes until lightly browned. The rounds will puff up while cooking but will fall upon resting for a few minutes.
To assemble crepes: Spread one tablespoon of cream cheese on each "crepe" round. Place two small slices of salmon (cut to fit) on each round, top with a few capers and one onion ring. Garnish with small wedge of lemon and parsley as demonstrated above.
Yield: 8 servings
