Easy Chicken Enchilada Recipe - Green Chicken Enchiladas Recipe

Ingredients:
- 3 cups of chopped or shredded cooked chicken
- 1 10-oz. can of green enchilada sauce
- 1 4 -oz. can of diced mild green chiles
- 1 8-oz container of sour cream
- 1½ cup of shredded colby-jack cheese
- 8 cornmeal crepes
Preheat oven to 400 degrees. Stir together sour cream, soup, enchilada sauce, and chiles in large skillet until well blended. Add chicken and bring mixture to a simmer. Let cook for 5 minutes or until chicken is thoroughly heated. Lay first crepe flat on working surface. Ladle ½ cup of chicken and sauce across center of crepe. Roll up. Place in an oiled 9 x 13 casserole dish. Repeat with remaining crepes and arrange side by side in casserole dish. Top with remaining sauce and cheese.
