Strawberry Crepes

Enjoy fresh strawberry desserts? Try this strawberry crepe recipe drizzled with our homemade strawberry sauce.




This crepe batter recipe is made with fresh strawberries.

You can keep it simple and top your finished crepes with any combination of fresh fruit and ice cream.

Or you can fill them with any of your favorite strawberry crepe filling recipes, such as cream cheese or almond cream.

Ingredients:

  • 1½ cups all-purpose flour
  • 4 tbsp of melted butter
  • 1¾ cups skim milk
  • ½ cup of fresh strawberries, washed, stems removed and roughly chopped
  • 3 eggs
  • 1 tbsp of granulated sugar
  • 1 tbsp of strawberry or raspberry extract or liqueur
  • 2 tsp of red food coloring (optional)
  • pinch of salt
  • Strawberry sauce

Yield: 24 6-inch crepes (8" pan) or 18 8-inch crepes (10" pan) 

Combine sugar, flour and salt in a small bowl and set aside. Add milk, extract or liqueur and strawberries in a blender and puree´ until smooth. Add eggs and whirl together until blended. Next, add melted butter and mix well. Add dry ingredients and whirl together until blended, scraping down sides of blender as necessary. Finally, add 1-2 tsp of red food coloring to enhance the color of batter, if desired.

Important: Refrigerate the batter for at least 30 minutes. This gives the batter the opportunity to rest and fully come together.
