Help!

My first batch of crepes was a disaster! Every time I greased the pan the batter slid around and when I tried to flip them, they just fell apart. Any hints?

Too Much Butter! NEW

Lannie, while I can't be sure, I think that you may be using too much butter or oil. If your pan is too wet, you won't able to flip the crepe very easily and it may not cook properly.

For most pans, you don't need to butter or grease the pan between every crepe. If you're using a nonstick pan, one coating of butter, oil or non-stick cooking spray is plenty for an entire batch.

The best way to learn to make crepes is through steady practice. As you get to know your pan and your batter, you'll develop your own perfect technique and end up with the world's best crepes!
