Mocha Frappuccino Crepes

Mocha Frappuccino Crepes


Makes 5 crepes

* 1 1/4 cups Starbucks bottled Mocha Frappuccino (The 9oz size bottle will work fine.)

* 1/2 cup unbleached or all-purpose flour

* 1 egg

* 2 – 2 1/2 sliced small bananas or 2 – 3 cups sliced strawberries (Depending on how much fruit you’d like to use.)

* 1 – 2 cups strawberry or vanilla yogurt (Once again, depending on how much you’d like to use.)

* non-stick cooking spray

* non-stick medium sized skillet

Heat your skillet over medium-high heat.

In a medium sized bowl, whisk together Frappuccino, flour and egg, until smooth. You don’t want any lumps. Spray your skillet with non-stick spray.

Using a 1/4 measuring cup, drop the batter into the skillet. Swirl it around on the bottom of the skillet until it is evenly and thinly spread out. Wait about 2-4 minutes for the crepes to cook. Once the side is done, it should begin to pull up a bit at the sides. Using a spatula, gently flip the crepe over. Wait another 2-4 minutes.

Remove from skillet and place onto a plate. Re-spray your skillet and repeat process until all of your batter is gone.

Placing a crepe onto a plate, dollop about 2-3 tbsp. of your chosen yogurt into the middle. Layer over a few slices of your chosen fruit. Fold the left side of the crepe into the middle, followed by the right side of the crepe, laying it on top of the left side. Sort of like a burrito or wrap. Dollop about a tbsp. of yogurt onto the top of the crepe (like shown in my picture), following with a few slices of fruit. This helps the crepe from coming undone.

Repeat process until all crepes have been used. Eat immediately.

Instead of using all the crepes, you can eat how many you would like and refrigerate the rest. These last about 3 days in the fridge. Just pop them into the microwave for about 30-40 seconds before using.
