Savory Breakfast Crepe

Prepare basic crepe recipe. Spread a thin layer of whipped cream cheese over the crepe. Brown thinly sliced smoked ham in a small amount of butter. Place two slices of ham on top of cream cheese. Prepare scrambled eggs using 2 eggs, salt, pepper and a splash of water. Whip with fork and then pour into hot pan. As the eggs begin to cook, sprinkle cheddar cheese and stir into eggs. When eggs are well cooked, divide egg mixture evenly over ham. Roll up crepes and toast in hot pan. Top crepes with pico de gallo.

My husband and I enjoyed two crepes each for brunch. We both liked this recipe and will certainly try other variations on it in the future.

LouAnne, that sounds delicious, or, as they might say in Mexico, delicioso! The pico de gallo gives the breakfast crepe a wonderful Mexican twist. And cream cheese, perfect!
