Ham and Cheese Crepes with Roasted Red Peppers

Want easy dinner recipes? How about crepes featuring a ham and gruyere with roasted red peppers recipe? It's delicious and surprisingly simple. Serve with a salad and you've just made a meal.




Ingredients:

  • 4 slices of smoked ham
  • 4 slices of Gruyere or Swiss cheese
  • 4 tbsp mayonnaise
  • 4 tbsp grated parmesan
  • 12 strips of roasted red pepper
  • basic crepes

Place each crepe on a flat work space. Spread 1 tbsp of mayonnaise on each crepe and sprinkle at least 1 tbsp of parmesan cheese on top of mayonnaise. Next, place a slice of smoked ham on top of the mayonnaise. Cover ham with gruyere. Then place several pieces of roasted red pepper on top of the cheese. 

Fold each crepe together by first folding over one side and then the other. If the crepe does not hold together, you may moisten the underside with mayonnaise to make it stick. 

Arrange crepes side by side in oiled baking dish and sprinkle more parmesan cheese on top of each crepe and add several more pieces of roasted red pepper on top of each. Bake at 350 degrees for 10 minutes, and garnish with fresh parsley.

Yield: 4 servings (1 crepe each).
