Crepe Recipe for Pear and Brie Appetizers
Seeking a crepe recipe for easy appetizers? Try these pear, brie, and raspberry miniature crepes at your next party. Your guests will love the combined flavors of sweet sauteéd pears, creamy melted cheese and tangy preserves. This dish works well as an appetizer for a main dish or as a finger food for an appetizer party.
10 4-inch Basic Crepes
2 tablespoons butter
4 Bosc pears, peeled and diced
1 teaspoon lemon juice
1 tablespoon brown sugar
1 tablespoon of cornstarch
1 wedge brie cheese
½ cup seedless raspberry jam
Fresh raspberries for garnish
Make crepes using a 6-inch skillet, which will yield 4-inch crepes. If you made your crepes ahead of time, remove from refrigerator (or freezer), wrap them in foil and warm in a 325-degree oven for 10 minutes until heated through. Meanwhile, melt butter in medium skillet. Add pears, lemon juice, and brown sugar. Cook until pears soften; stir in one tablespoon of cornstarch. Simmer for 1 minute. Spread 2 tablespoons of pears on each crepe. Add a small slice of brie cheese and 1 teaspoon jam. Roll up each crepe as pictured above. Add fresh raspberries to garnish. Serve immediately. Yield: 10 servings (1 miniature crepe roll each)
