Crepes Recipe for Turkey Pot Pie Filling

Bring back the good memories by making this crepes recipe featuring the flavor of old fashioned turkey pot pie.
We've given this turkey recipe a modern twist with fresh thyme.
- 5 tbsp of butter
- 1 medium onion, chopped
- 1 carrot, chopped, small dice
- 1 medium potato, chopped, small dice
- 3 tbsp of flour
- 4 cups turkey or chicken broth
- Salt and pepper
- 3 cups cooked turkey, shredded into small pieces
- 1 cup frozen peas
- 2 tsp fresh thyme leaves
- 8 Basic Crepes with Thyme
In a large skillet over medium heat, melt butter. Add onions, carrots, and potatoes. Cook for 8 minutes or until onions soften and vegetables begin to caramelize. Add garlic and cook for another minute, continuing to stir. Add flour, stirring to coat vegetables, and cook for 5 minutes more. Slowly add broth, one cup at time, whisking constantly until mixture comes to a boil. Stirring frequently, reduce heat and simmer for 10 minutes until sauce thickens. Add turkey, thyme, peas. Salt and pepper to taste. Preheat oven to 350 degrees. Pour ⅔ cup mixture inside each crepe. For an impressive presentation, roll up each side vertically and then horizontally or burrito-style. Repeat with remaining crepes. Arrange in an oiled 9" x 13" baking dish and pour remaining sauce over crepes. Bake for 15 minutes. Before serving, garnish with a sprig of fresh thyme. Yield: 8 servings (1 crepe roll each).
