Seeking a great crock pot oatmeal recipe? This steel cut oats recipe is perfect for your slow cooker and makes an easy breakfast crepes recipe.
I love cooking steel cut oats but making them on the stovetop means you have to stir, stir, and stir!
Let your crock pot do the hard part -- and you'll be rewarded with creamy, thick oats studded with cranberries, apples and raisins.
For extra flair, roll your warms oats up in crepes and garnish with maple syrup and walnuts. Yum!
Ingredients:
- 4¾ cups of water
- 1½ cups of steel cut (Irish) oats
- ½ cup of firmly packed brown sugar
- ⅓ cup of golden raisins
- ⅓ cup of dried apples, chopped
- ⅓ cup of dried cranberries
- 1 tsp of ground cinnamon
- 1 tsp of vanilla
- ½ tsp of salt
- ½ cup of chopped toasted walnuts, for garnish
- ½ cup of warm maple syrup, for garnish
- 8 basic crepes
Coat the inside of your crock pot with nonstick cooking spray or use a liner. Add first 9 ingredients and mix together. Replace lid and cook on low for 6-7 hours. Yield: 8 servings (½ cup each)
To serve, sprinkle each serving with 1 tbsp of walnuts and drizzle with maple syrup. If desired, roll up ½ cup of cooked oats inside a warm crepe. Top each serving with walnuts and syrup. Serve immediately.
