Savory Swedish Meatball Sauce with Sour Cream and Parsley Rolled up in Golden Crepes

Ingredients: - Two 1 1b. bags of frozen meatballs (32 oz. each)
- 1 packet of dry French onion soup mix
- 2 tsp of dijon mustard
- 4 cups of water
- ¼ cup of flour
- ¼ cup of sour cream
- ¼ cup of parsley (optional)

Mix together soup mix, flour, water and mustard in a medium bowl. Set aside. Place meatballs in your crockpot on the lowest setting. Pour sauce over meatballs and cook for 4-6 hours or until meatballs are thoroughly cooked.Once cooked, using a slotted spoon, remove meatballs to a large bowl. Cover and set aside. Stir sour cream into remaining sauce in crockpot until combined. Add meatballs back into crockpot and stir to coat. Meanwhile, if you made your crepes ahead of time, wrap them in foil and reheat in a 325-degree oven for about 10 minutes or until warmed. Assemble crepes: Lay first crepe on serving platter. Place 4-5 meatballs inside crepe and roll up. Repeat with remaining crepes. Pour extra sauce over top of crepes and garnish with parsley. Serve immediately.
