Broccoli and Cauliflower Au Gratin

This recipe may remind you of broccoli and cauliflower casserole but with a twist. It includes a dreamy homemade cheddar cheese sauce recipe and a crunchy topping of bread crumbs.

This recipe works as an easy side dish but can stand on its own as a main dish when you need quick dinner ideas!





With this recipe, your kids are assured of not only getting their vegetables but they'll actually thank you for it. Better yet, they'll never ask for macaroni and cheese again!

Ingredients:

  • 2 crowns of broccoli
  • 1 head of cauliflower
  • 1 tsp of salt
  • ½ tsp of black pepper
  • ½ cup of grated mild cheddar cheese
  • 3 tbsp of dried bread crumbs
  • cheddar cheese sauce
  • 8 basic crepes
Wash broccoli and cauliflower and trim into ½-inch pieces. Place vegetables in a large pot of boiling water. Cook for 8 minutes or until tender. Meanwhile, make cheddar cheese sauce.

Once broccoli and cauliflower are cooked, drain vegetables and season with salt and pepper. Preheat oven to 450 degrees.

Assemble crepes: Lay the first crepe inside an oiled baking dish. Add ¾ cup of vegetables to the inside of the crepe. Top with 2 tbsp of cheese sauce and roll up. Repeat with remaining crepes. Once all crepes have been assembled in the baking dish, pour remaining sauce over top of crepes. Top with grated cheese and breadcrumbs. Bake for 10 minutes or until topping turns golden brown.

Yield: 8 servings (1 crepe roll each)
