Ingredients:
- Basic crepe recipe
- ¼ cup of fresh zucchini, grated
- ¼ cup of fresh carrots, grated
- 2 packages of cream cheese, softened
- 1 tbsp of chives, minced
- 1 tbsp of fresh parsley, chopped
- 1 tbsp of fresh dill, chopped
First, make basic crepe recipe. Refrigerate batter. Next, add zucchini and carrots to batter and stir. Now, make crepes according to directions in How to Make Crepes. You will need 8 crepes for this recipe.
Beat cream cheese for 1 minute until smooth and creamy. Add herbs and mix until thoroughly incorporated.
Assemble crepes: Lay first crepe flat on serving dish. Spread with 2 tbsp of herbed cream cheese. Fold in half and then into quarters. Repeat with remaining crepes.
Yield: 8 servings (1 crepe each)
